I got an alignment and painted a line across the tie rod ends, turnbuckle, etc., so I could see if any of that moved after 4 wheeling and my steering wheel being off center. So after 4 wheeling my steering wheel was off center and I looked under the truck at my painted lines and all were straight across/no movement. Alignment felt fine (no pulling, etc) and the lines showed that alignment was fine. Then I read on a Jeep forum that a guy with a similar problem--steering wheel off center after 4 wheeling--simply drove his Jeep up to a curb and turned the steering wheel into the curb to straighten it. I tried that and it worked! Do I like that I have to do this or that this happens? No. Am I glad I discovered a quick fix? Yes. As I've read more about this and various parts, I suspect perhaps the teeth on the sector shaft may be worn and thus the steering wheel jumps sometimes when offroading.

I still maintain that your Tie rod is bending. Seen it once before.

Follow up. I had an adjustable panhard bar installed several months ago to shift the front axle back to center. (It was to the left a little bit due to 2 inch lift.)
A happy side effect of that is that the problem with the steering wheel constantly going off center went away. Yay!
